PART 1:
The tomatillo (Physalis ixocarpa or Physalis philadelphica) is a small, spherical and green or green-purple fruit
surrounded by a paper-like husk formed from the calyx. As the fruit matures, it fills the husk and can split it open by
harvest. The husk is brown and the fruit yellowish when it is ripe. Tomatillos are the key ingredient in fresh and
cooked Latin American green sauces. The freshness and greenness of the husk is a quality criterion. Fruit should be
firm and bright green as the green colour and tart flavour are the main culinary contributions of the fruit.
The tomatillo is also known as the husk tomato,jamberry,husk cherry,or ground cherry, although these names can also
refer to other species in the Physalis genus. In Spanish it is called tomate de cáscara, tomate de fresadilla,
tomate milpero, tomate verde ("green tomato"), tomatillo (Mexico [this term means "little tomato" elsewhere]),
miltomate (Mexico, Guatemala), or simply tomate (in which case the tomato is called jitomate). Even though Tomatillos
are sometimes called "green tomatoes",they should never be confused with green,unripe tomatoes,because these could be
poisonous because of their content of solanine. Other parts of the tomatillo plant also contain toxins,and should not
be eaten.
Fresh ripe tomatillos will keep in the refrigerator for about two weeks. They will keep even longer if the husks are
removed and the fruits are placed in sealed plastic bags stored in the refrigerator. They may also be frozen whole or
sliced.
Propagation and care. Culture is very similar to that for tomatoes or peppers. Plantings are generally direct seeded,
although tomatillo transplants well when necessary to fill in stands. Plant spacing and population density vary
considerably among growers. Row spacings of 40 inches (single row) to 7 feet (two rows) have been observed.
In-row spacings vary from 12 to 36 inches. First harvest is generally 70 days to 80 days from seeding with a harvest
period which can exceed 60 days. Fruits are harvested selectively by hand as they attain market size. They are not
ripe until the fruit begins to break through the husk. The husks need to be dry at the time of shipping,so if they are
not already dry at the time of harvest you need to dry them down after harvest. Preferred fruit size is about 1 1/4 inches
in diameter. Specific recommendations on storage temperatures are lacking, but probably would be similar to fresh tomatoes,
i.e. a minimum of 55° F.
These TOMATILLO SEEDS are packaged in heat sealed packets without

TOMATILLOS; - pronounced [toh-MAH-tee-YO]
Botanical name: Physalis philadelphica. A relative of the tomato and member of the nightshade (Solanaceae)
family tomatillos provide that tart flavor in a host of Mexican green sauces. In Mexico the fruit is called
tomates verdes, tomates de cascara as well as fresadillas.
The fruits average about 1 -2" wide and have a papery outer skin. The tomatillo is actually used when
it is still green. When the fruits have turned a light yellow that indicates that it is ripe & past its
prime for most uses. Tomatillos have a very tart flavor,not at all like a tomato.

Incredibly large tomatillo. This is easily twice the size of most tomatillos,making preparation
into salsa even easier. Apple-green fruit have a papery husk that splits open as tomatillos mature
and turn yellow-green. Use in the bright green stage for the tartest flavour,or allow to ripen further
for a sweeter taste.

This tomatillo has a sweet, fruity taste that reminds you of a pineapple. Short, spreading plants yield
plenty of these tasty fruit used in salsas,especially those made with fruit as an ingredient.

Sweet yet tart flavour for use especially in Mexican dishes. These small fruits form inside papery
husks & begin as pale green,then ripen to a rich,deep purple. Vigorous and productive plants.

Round green tomatillos have a papery husk that is removed before preparing. Vining plants are easily
grown & prolific. Flavour is sweet yet tart used in green Mexican salsa & other Mexican dishes.

1 to 2 oz. round green fruit inside a tan coloured,papery husk. Plants give a continuous set of
these tomato relatives that are used to make green Mexican salsa. Easy to grow. Indeterminate.
GROUND CHERRY: (Physalis pruinosa)
Harvest ground cherries when they fall from the plants. They should be eaten when they are fully ripe and have turned
from green to yellow. Ground cherry prefers well-drained soil without fertilizer. Culture is similar to tomatoes.
It can also be grown in pots.

Not a true tomato, but a member of the tomato family. Plants grow 1-1/2 to 2-1/2 feet
tall,bearing 1/2 to 3/4-inch fruit enclosed within a lantern shaped,paper-like husk.
When ripe,fruit is yellow & husks turn light brown. Ground cherries have a sweet tart
flavour & can be eaten fresh or cooked into desserts,pies, preserves or sauces.
